These beautiful wild leeks or ramps are foraged by our friend Ryan. They are one of the first plants to come up in the spring and have a wonderful flavour. Similar to garlic or onion, they are great in a pesto or any recipe you would use scallions in. Because of their popularity, which in many places has led to over harvesting and habitat loss, it is important to know their source.
